The harvest at Chablis starts at the end of September or the beginning Of October. The grapes reach maturity at the same time as we use a single type of grape. Until recently, harvesting was done manually as below.

Today we gather
grapes by machine. It is very simple :
Beaters shake the vine plants and the grape fall into the side tanks. The
machine harvested one row at a time.

When the side tanks are full, it is necessary to empty them into a specifically designed transporter.
